Honey & Coconut Rice Pudding

The perfect sweet comfort food! A healthy & gluten free breakfast, snack or special dessert. Coconut & honey are heavenly together you won’t be disappointed.

Ingredients:

1- 15 oz can of full fat coconut milk
1- cup of brown or white rice (I use brown basmati rice)
1/4- cup of Ariel's Golden Samurai Honey (Add more if you want it sweeter or want more spice)
2- tsp. of vanilla extract
1 -cinnamon stick
1/2- tsp. of fresh ground nutmeg
1- cup of unsweetened Almond Milk
Pinch of salt
1 -cup of flame raisins
1/2- cup of shredded dried coconut

Steps:

  1. Boil coconut milk then add the rice.

  2. Boil 5 more minutes, then simmer 20 minutes.

  3. Stir in almond milk, honey, cinnamon stick, salt, nutmeg, coconut & raisins.

  4. Simmer another 20 minutes. Enjoy!
